Ingredients
Homemade french onion meatballs (see that recipe video!)
6 yellow onions thinly sliced
¼ cup flower
6 cups beef broth
4 sprigs thyme and a bayleaf
¼ cup Worcestershire sauce
¼ cup butter
1tbs avocado oil
½ cup dry white wine (optional - sub with NA wine)
¼ cup dry sherry (optional)
1 cup shredded gruyere cheese
A baguette (I like ciabatta!) cubed and baked till crispy at 400 degrees for 10ish minutes). You could also just slice and toast it!
Salt and pepper to taste
Method
Preheat a large soup pot over medium-low heat and add in butter and oil.
Once melted add in all the onions, a large pinch of salt, and stir to combine.
This part will take the longest and patience! It could take up to 45 minutes. Cook the onions down, stirring CONSTANTLY (every 5ish minutes) until they are a dark brown and reduced. If they are burning, turn the temperature down.
Once reduced add in the sherry and wine, stir, and let cook for 5 minutes.
Add in the flour, stir to combine, and let cook for 3ish minutes.
Carefully whisk 2 cups of the broth, once that is fully incorporated add in the rest of the broth, wash your sister sauce, thyme and bayleaf, and salt and pepper.
Increase the heat to medium high and once simmering add in your meatballs. Cook for 15 minutes.
Preheat the oven to Broil, carefully ladle the soup into oven safe bowls, top with bread then cheese (as much as your heart desires!).
Broil until the cheese is melted and colored on the edges.
