Ingredients
• 120 ml milk, warm
• 5 g instant yeast
• 30 g sugar
• 250 g all-purpose flour
• 3 g salt
• 35 g softened butter
• Chocolate Truffle for filling
• Sugar, for coating
• Oil, for frying
Method
1. In a mixing bowl, combine warm milk, yeast, and sugar. Let it sit for 5 to 7 minutes until it becomes slightly frothy.
2. Add the flour and mix until it forms a shaggy dough.
3. Incorporate the salt and knead briefly.
4. Add the softened butter and knead for 10 to 12 minutes until the dough is smooth, elastic, and slightly tacky.
5.Cover the dough and let it proof in a warm place until it has doubled in size (about 1 to 1.5 hours).
6. Punch down the dough and divide it into 80 to 90-gram portions.
7. Shape each portion into a smooth ball, cover them, and let them proof again for 30 to 40 minutes until puffed.
8. Heat oil over medium heat. Fry each ball until golden brown on both sides.
9. While still warm, generously coat the bomboloni in sugar.
10. Fill the bomboloni with Chocolate Truffle using a piping bag ,be generous!
