Ingredients
All-purpose flour (Maida) – 1 kg
Yeast – 20 g
Sugar – 50 g
Salt – 10 g
Oil / Butter – 50–60 g
Water – 500 to 600 ml (lukewarm)
Method
Activate Yeast
Take lukewarm water in a bowl. Add sugar and yeast. Mix well and rest for 10 minutes until it becomes frothy.
Prepare Dough
In a large bowl, add all-purpose flour and salt. Mix well.
Add activated yeast mixture and knead the dough.
Add Fat
Add oil or butter and knead for 10–12 minutes until the dough becomes soft and smooth.
First Proofing
Cover the dough and keep it in a warm place for 1 to 1.5 hours or until it doubles in size.
Shaping
Punch the dough to remove air. Divide into equal portions and shape into balls.
Place them on a greased baking tray with little space between them.
Second Proofing
Cover and rest for 30–40 minutes until they rise again.
Baking
Preheat oven at 180°C.
Bake for 18–22 minutes until the top turns light golden.
Butter Glaze
Remove from oven and immediately brush with butter for soft and shiny pav.
Serving Suggestion
Serve hot with butter, pav bhaji, chai, or make classic bun maska.
Tips
Always use lukewarm water, not hot
Kneading well is the key to soft pav
Proofing time may vary according to weather
