Double Layer Earl Grey Basque Burnt Cheesecake (Mini) ✯「迷你版」双层伯爵茶巴斯克焦香乳酪蛋糕✯
Things are always cuter in mini size, don't you think so? I modified the usual recipe for a 6" round Basque Burnt cheesecake into 6 mini cheesecakes. There is a bottom layer infused with earl grey, and a top layer of original flavour.
Try serving this mini cheesecake with some thyme infused caramel sauce. You will be surprised by how well this paring goes!
Tips: If you do not have earl grey powder, you can infused the whipping cream with two earl grey tea bags.

Yield: 6 muffin-size cheesecake
Ingredients:
Cream cheese 奶油乳酪 250g
Sugar 砂糖 70g
Large eggs 全蛋 (大) 2 no.
Whipping cream (I) 鲜奶油 72g
Cake flour 低筋面粉 5g
Whipping cream (II) 鲜奶油 72g
Earl Grey powder 伯爵茶粉 6g
Bake in preheated oven with top & bottom heat 220C for 15 minutes, then turn off the bottom heat.
With only top heat at 220C, bake for another 3 - 5 minutes, or until the top of cheesecake is nicely charred.
