Its time to take your cake to the next level, Watch Nonna and learn how to make her super delicious (made for grownups😉) Coconut Rum Cake.
INGREDIENTS
Cake Mix -
Flour - 2 cups
Sugar - one cup
Eggs - 8
Vegetable oil - one cup ,
Milk - one cup ,
Baking powder - 4 teaspoons
Vanilla - 2 envelopes or 1 teaspoon of vanilla extract
Orange - one orange juice squeezed, plus the zest
Coconut - 2 cups shredded, unsweetened
Rum Syrup -
Water - 3 cups
Sugar - 1/2 cup
Lemon - 1 squeezed plus zest
Rum - 4 ounces
DIRECTIONS
CAKE -
In a mixer, add eggs and start mixing at medium speed
Add the sugar and oil Mix For about a minute,
Start adding your flower slowly (1 cup), add your milk, the orange juice and zest.
Add the vanilla the rest of the flour and mix for half minute
Remove the bowl from the mixer and add your baking powder and the coconut
mix well! By hand
Pour the batter into a greased Glass pan (13 x 9)
Bake the cake at 350º for 45 minutes
Let the cake cool completely
RUM SYRUP -
In a large pot add the water, sugar and lemon juice and zest
Bring it to a boil and cool
ASSEMBLY
Once the Syrup cools ,and the cake is cool, poke the top of the cake with a lot of holes (Watch Nonna) using a fork or sticks Pour all the syrup over the cake until absorbed
You can garnish the cake with some unsweetened coconut.
Cover with saran wrap and refrigerate until chilled.
