Yes, you can still stream from an iPad 2 with the right setup - let me show you how!
One of my favourite games is Army of Darkness Defence a tower defence style game that is almost impossible to play these days. It's no longer available in the official stores and you can only play with an old copy on an old device.
I have it still on an old iPad 2 and tried to find a way to stream it. After a great deal of research, I find the right kit and setup to make it happen and thought I should share this with others who might be looking to do the same thing, so I hope this helps someone else and watch out for new Army of Darkness Defence videos on the main Follow That gaming channel @FollowThatApp
You could do this with most video capture cards with the right connectors (HDMI output, USB input), but if you're interested my cheap one was an AV:Link 4K HDMI.
