Leftover Turkey Chowder
Total Time: 35 minutes
Makes: 4 servings, approx. 1 ½ cups each
1 red; ½ green; 1 yellow; 1 tsp
Ingredients:
2 cups diced, cooked turkey, skinless
4 slices turkey bacon, chopped
1 cup diced onion
½ cup chopped carrots
½ cup chopped celery
2 minced garlic cloves
2 cups potatoes, peeled, ½“dice
1 T ghee
2 ½ cups homemade turkey stock, or non-sodium chicken stock
½ cup 5% Greek yogurt
1 tsp fine salt
½ tsp black pepper
2 tsp Tabasco sauce, optional
Preparation:
1) In a large soup pot, melt the ghee over medium-high heat, then add the bacon and cook, stirring occasionally, until crispy, about 5 minutes. Remove with a slotted spoon and set aside.
2) Add the onion, carrot, celery and garlic. Cook, 3-5 minutes, until onion is translucent.
3) Add the potatoes, salt, pepper and turkey stock, bring to a boil, reduce to a simmer and cook, 8-10 minutes, until potatoes are very soft.
4) Kill the heat; add the yogurt and blend either with a stick blender or in a stand blender with the center cap removed and the hole covered with a towel, until smooth.
5) Stir in the bacon, diced turkey and Tabasco, if using, and serve.
