For the spice mix:

2 tbsp coriander seeds
1 tbsp black pepper
2 star-anise pods
6-7 green cardamom pods
1/2 tsp fenugreek seeds
5-6 dried red chilies
2 tsps cumin seeds
1 tsp fennel seeds
1.5 tbsp poppy seeds
1 inch ginger
4-5 cloves of garlic
1/4 cup vinegar (white/palm wine vinegar/red wine vinegar)
1.5 tbsp salt
1/2 cup water


For the wine marinade:
1 cup wine
4-5 garlic cloves
1 tbsp coriander seeds
bay leaves
1 tbsp pepper
4-5 dried red chilies
red chili powder
1.5 tbsp salt
curry leaves (optional)

For the stew:
onion (80 grams) - 1 no. medium sized onion
tomatoes (240 grams) - 3 no.
4-5 garlic cloves
chicken stock (or water)
coriander leaves/cilantro
ground fennel
garam masala
