Missi roti is a delicious Indian flatbread made with a mixture of gram flour and wheat flour and seasoned with spices.
Ingredients
115 g (4 oz) gram (chickpea) flour
115 g chapatti or wholemeal flour
125 ml (4 fl oz) water
1 small onion, finely chopped
1 green chilli, deseeded and finely chopped
1 tbsp melted ghee or butter
1 tbsp chopped coriander (cilantro)
½ tsp salt
½ tsp turmeric
Melted ghee or butter for brushing
Instructions
Put all the ingredients except for the oil and water into a large bowl. Mix well.
Make a well in the centre and add the melted ghee and most of the water. Mix well. Add more water if necessary to achieve a soft and slightly sticky dough.
Knead in the bowl for 1 minute, then cover and leave the dough to rest for 1 hour.
Divide the dough into four equal pieces. Flour a surface and roll each piece of dough out to about 15 cm (6") in diameter.
Brush one side of the roti with melted ghee then cook ghee side down on a hot pan for 1 minute. During this time brush the top surface of the roti with melted ghee.
Turn the roti over and cook the other side for 1 minute.
Notes
You can replace the chopped green chilli with ½ tsp of chilli powder if you prefer. Make sure you chop the onion finely to make it easier to roll out the rotis prior to cooking.
