The Most Expensive Coffee House Cookbook (?) UC, Davis Coffee House Veggie Nut Casserole from 1986

Описание: Let's look at what may be the most expensive Coffee House Cookbook on the second hand market! I have no idea why this is so expensive on the internet but I found it in a thrift store for only $1!! It's very cute and has lots of interesting recipes including this Veggie Nut Casserole.

What you'll need:
2 c Carrots, grated
2 c Cabbage, shredded
1/2 Onion, chopped
1/2 c Parsley, chopped
1 clove Garlic, crushed
2 c Walnuts or Pecans, chopped
1 1/2 c Brown Rice, cooked (3/4 c uncooked)
1 1/2 c Sunflower Seeds
1 c Tomato Sauce
1/2 c Cottage Cheese
3 Eggs
2 tsp Salt
1 tsp each: Cumin, pepper and ground Caraway
1/2 tsp Cinnamon
Saute veggies in 1/2 c oil for 10 minutes. Finely chop walnuts and sunflower seeds in blender. Combine veggies, nuts and rice.
In separate bowl, mix tomato sauce, cottage cheese, eggs, spices and salt. Add to veggie mix. Spread in 9 x 13 pan and bake for 30 minutes at 325 until top becomes crispy.
For Sauce:
1/3 c Margarine
2/3 c Flour
2 c Milk
1/2 Half and Half
1 Egg Yolk
1 Bay Leaf
1/4 tsp Salt
1/4 tsp White Pepper
Melt butter in saucepan over low heat. Stir in flour. In separate bowl, mix milk, half and half, egg yolk and spices. Add slowly to roux, stirring constantly. Cook till sauce thickens.
Spoon over casserole servings.
