Water ~6g (only for chocolate dough)

Water – 500g
Sugar – 25g

🍡 *Mochi Filling*
Glutinous rice flour – 35g
Tapioca starch – 7g
Sugar – 15g
Milk – 70g
Vegetable oil – 10g

🧁 *Other Fillings*
Crushed pistachios – as needed
Chocolate chips – as needed
Shredded cheese (3-cheese blend) – as needed

Extra crushed pistachios
Cheese
Cocoa powder

🔪 *Step-by-Step Instructions*

*Step 1: Make the Preferment*
In a large bowl, combine *200g bread flour**, **290g water**, and **4g instant yeast**. Mix well until no dry flour remains. Cover and let it rest at room temperature for **2 hours* until bubbly and risen.

*Step 2: Make the Main Dough*
Add the preferment into a mixing bowl. Add **260g bread flour**, **40g cake flour**, and **4g salt**. Knead the dough until smooth and elastic — you should be able to stretch it into a thin windowpane. Divide into **2 equal portions**, cover, and rest for **20 minutes**.

*Step 3: Make the Chocolate Dough*
Take one portion of dough, add *6g cocoa powder* and about *6g water* (adjust as needed). Knead until fully incorporated with a marbled effect. Let it rest **20 minutes**.

*Step 4: Divide the Dough*
Divide both the plain and chocolate doughs into *6 equal balls each* (12 total). Roll each into a smooth ball. Cover and let them rest for **15 minutes**.

*Step 5: Prepare the Fillings*
*Mochi:* Combine glutinous rice flour, tapioca starch, sugar, and milk. Mix well, then steam for *15 minutes* until set. While hot (but safe to handle), knead in the *10g oil* until the dough becomes smooth and stretchy. Divide into **12 logs (18g each)**.
**Crush pistachios**, separating fine powder and chunks.
Get *chocolate chips* and *shredded cheese* ready.
