Описание: Sampalok Candy | Patok Na Pang-negosyo
Here in the Philippines it is common mostly in sari-sari store to sell Sampalok Candy you can buy one piece of it for only one pesos but today 2018 I'm not sure if they still selling it for one pesos. If you're planning to have a business sampalok is a great business because it is easy to cook and less ingredient.

Sampalok Candy Recipe
Ingredients
½ kilo (500g) Sampalok (Sweet Tamarind)
1 cup brown sugar
½ cup water
1 cup flour or mashed sweet potato (optional)
Sugar (for rolling)
Salt
Cellophane wrapper (for packaging) or a container with lid

Procedure
1. Crack the tamarind(sampalok) shell using your thumb and index finger. Removed strings from the tamarind.
2. In a pan add sampalok(tamarind) and water. Bring it to a boil over medium heat. Then lower the heat add brown sugar. Mix until the sugar melts and well combined with the tamarind pulp.
3. Simmer until it thickens then add flour or mashed sweet potato. We’re adding flour so our sampalok candy won’t be too tough (makunat) and sour. It also extend servings.
4. Mix until the flour is well incorporated. Then add a bit of water and continue to cook until smooth and sticky.
5. Transfer to a plate with sugar and put mixture on top of it so it won’t stick. Let it cool.
6. Onced it cool shape the mixture into a log using the palm of your hands. If you’re going to sell it you can make it thinner. You can also shape it into a ball (tamarind ball).
7. Then roll it into sugar and salt and wrap in cellophane or store it in a container with lid.

Yields: 20 pieces
For smaller size it can yield 40 pieces

Enjoy!
