🥣 INGREDIENTS
Yield: 6-inch 3-layered cake
For the Coffee Sponge Cake:
225 g unsalted butter, softened
175 g caster sugar
1 tsp vanilla extract
4 large eggs
200 g all purpose flour
25 g cornflour
1½ tsp baking powder
42 ml milk
½ tsp salt
2 tbsp instant coffee powder
For the Coffee Mascarpone Frosting:
250 g mascarpone cheese, chilled
125 g icing sugar, sifted
1 tsp vanilla extract
300 g double cream, chilled
2 tbsp instant coffee powder
¼ tsp salt
For the Walnut Praline:
125 g golden caster sugar
50 g walnuts, chopped
a pinch of sea salt flake
Notes:
1. 1. Around 60 g / egg (without shell)
2. Bake in preheated oven at 180℃ fan / 350 ℉ for 20 - 25 minutes and let it cool in the pan for 10 mins. Remove from the pan and peel off the baked parchment paper.
3. Let the cakes cool completely on a wire rack.
