For this super bowl chicken wings you'll need...

3- 5 lbs chicken wings

Brine:
1/4 cup salt
1/4 cup brown sugar
3 cups water
1/2 teaspoon black pepper
1 scallion
2 slices ginger
4-6 allspice berries
4 sprigs thyme

Tamarind Glaze
1 cup tamarind pulp
3 cloves garlic
4-5 cups water
2 slice ginger
2 scallions
1 cup brown sugar
1/4 cup tomato ketchup
juice of 2 oranges
1 scotch bonnet pepper
1/4 teaspoon salt
1 tablespoon olive oil
2 tablespoon honey
