MEAL PLAN and PREP for the week:

Breakfast - Egg Casserole
Lunch - Sausage and Roasted Veggies ( recipe in My Southern Keto Kitchen cookbook)
Dinner- Italian Instant Pot Meatloaf, Mashed Cauliflower (recipe in my Ecourse, Easy Keto Meals in under 45 minutes)
Snack - whisps ( or your snack of choice)

FOR MEAL PREP
Make egg casserole, place sausage, veggies, and spices on sheet pan -
Place both casserole and sheet pan in the oven at 375 degrees for around 30 minutes.
While its cooking, get your instant pot meatloaf prepped and start it cooking ( you could form this meatloaf and cook it in the oven AT THE SAME time and temp as everything else. In the oven it will take around 60 minutes to finish.
Make caulimash after you finish the IP Meatloaf -
All things prepped and cooked in easily less than 2 hours.

Recipe for egg casserole
1 lb ground sausage, cooked
12 eggs
1/4 cup heavy whipping cream
seasoning of choice.
Mix all together well and place in casserole dish ( or into cupcake pan for egg bites). Bake at 375 for 25-30 minutes.

Recipe for CauliMash
Cook 1 package riced cauliflower in its own steam bag in microwave according to directions.
Toss the cauliflower, 4 oz cream cheese, 4 oz sour cream, 1 cup shredded cheese in the blender. Blend until smooth. at this point you can put in a casserole, top with cheese and bacon and bake until bubbly... or if doing for meal preps, portion into your containers and top with a bit of cheese and bacon, and reheat daily in microwave next to your meatloaf!
