THE MEALS:

Smoothie - Tropical Protein Smoothie
We blended ALDI's frozen tropical smoothie mix with vegan protein powder ( https://amzn.to/40NH36g ), banana, water & soya milk.

Lunch - Avocado & Edamame with Crispy Chickpea Sandwich
We used our recipe to make the avocado and edamame spread ( https://lovelyjubley.com/avocado-edam... ) and then topped that with chickpeas that were crisped up in the pan and seasoned with salt, pepper, smoked paprika & garlic granules.

Dinner - Spaghetti & Meatballs with Lemony Broccoli
We made a simple marinara style sauce with onions, garlic, tomatoes, pepper, basil, mixed herbs, tomato paste and sugar. We served that with Linda McCartney's Vegan Meatballs on some spaghetti and a side of lemon roasted broccoli. The broccoli was simply roasted in oil, salt & lemon juice. To season we made a cashew parmesan by blending nutritional yeast, salt and cashews.
