Sourdough Brioche Sandwich Bread (Stiff Starter)
Stiff Starter
• Bread flour 70 g
• Water 35 g
• Active sourdough starter 70 g
Mix, knead smooth. Let it double (about 4 hours).
Dough
• Stiff starter 160 g
• Honey 60 g
• Water 20 g
• Milk 90 g
Mix to dissolve.
Add:
• Eggs 3
• Vanilla a little
• Bread flour 350 g
• Salt 7 g
Knead. Add butter 100 g in 3 parts. Knead until smooth and stretchy.
Windowpane test ✔️
Lightly oil. Rest 4–5 h until about 50% bigger (25°C / 77°F).
Divide into 6 pieces. Shape and place in a 10×20 cm (4×8 in) pan.
Final rise 2–2.5 h until doubled.
Bake at 180°C / 356°F for 35–40 min.
Brush with butter, cool, slice, enjoy 🤍
