🥘 Ingredients

Whole Spices

Shahi Jeera – ½ tsp

Black Pepper – ¼ tsp

Cinnamon – 1 inch

Black Cardamom – 3

Cloves – 3

Mace – 1

Bay Leaves – 2


Other Ingredients

Oil – 1.5 tbsp

Onions – 2 (sliced)

Garlic – 18–20 cloves (crushed)

Potatoes – 3 large (cut into 4–6 pieces)

Green Chillies – 5–6

Tomatoes – 2 (chopped)

Water – 2 glasses

Salt – 1 tsp

Rice – 1 cup (200 g)

Lemon Juice – 1

Ghee – 1 tsp

Dry Mint (Pudina) – for garnish

👩‍🍳 Method

1. Heat 1.5 tbsp oil and add shahi jeera, black pepper, cinnamon, black cardamom, cloves, mace, and 2 bay leaves.

2. Add sliced onions and sauté until golden brown.

3. Add crushed garlic and fry for a minute.

4. Add potatoes and fry until lightly golden.

5. Add green chillies and chopped tomatoes; cook until tomatoes soften.

6. Pour in 2 glasses of water and bring to a boil.

7. Add salt (1 tsp) and washed rice (1 cup / 200 g).

8. Add lemon juice and 1 tsp ghee; mix gently.

9. Close the pressure cooker and cook for 2–3 whistles.

10. Garnish with dry mint and serve hot with bhuna jeera chaas or raita.
