Don't get it twisted, we love rhubarb in virtually any baked good. But we also like the bright tanginess it offers to a cocktail. In this video, we walk through how to make the rhubarb simple syrup for this rhubarb gin libation.
In addition to simple syrup, we add gin, freshly-squeezed lime juice and a bit of soda water. If you prefer your drinks to be less sweet, add more soda water on top. It will cut the sweetness, while also adding an element of effervescence.
If you want to make a big batch for a party, you can make this even easier by putting the ingredients into a big pitcher (multiplying the quantities but tasting just in case) and then pouring over glasses with ice.
