In this video, I’ll guide you step by step: from feeding the starter, mixing and folding the dough, to shaping and baking in a Dutch oven. With just flour, water, salt, and time, you’ll get an artisan-style loaf at home.
Why semolina? It gives the bread a beautiful golden color, a nutty flavor, and an even crunchier crust. Plus, sourdough is easier to digest and full of natural flavor.
📌 Recipe Ingredients:
Starter feed
¼ cup sourdough starter (60 g)
1 cup flour (120 g)
½ cup water (120 g)
Bread dough
2 cups all-purpose flour (250 g)
¾ cup semolina flour (100 g)
1 cup water (225 g)
1¼ tsp salt (7 g)
⅓ cup active sourdough starter (90 g)
⏲ Bake at 240°C (460°F) covered for 40 minutes, then uncover and bake at 225°C (440°F) for 15–20 minutes.
