🌱Ingredients
2 cups all-purpose flour (240g)
2 tsp baking powder
¾ tsp salt
1 cup granulated sugar (200g)
¼ cup vegetable oil (60mL)
¼ cup (4 Tbsp) unsalted butter, melted (56g)
1 egg, room temperature
2 tsp vanilla extract
½ cup Greek yogurt (120g, plain)
1¼ cups blueberries, fresh or frozen (180g)
1-2 tsp brown sugar, optional for topping
👩🍳Cooking Steps
Preheat oven to 350°F (180°C) and grease a 9×9 baking pan.
Whisk sugar, oil, melted butter, egg, and vanilla until smooth in a large bowl.
Stir in the Greek yogurt.
Stir in baking powder, salt, and flour until combined.
Fold in the blueberries.
Spread batter into the pan and bake 40–45 min, or until a toothpick comes out with moist crumbs.
*Optional: Sprinkle 1-2 tsp of brown sugar over the top for a crispier crust.
Let cool (for as long as you can resist) and enjoy!
