Everyone used to make their own pancake mix in Korea, before the product was launched. A mixture of flour, potato starch, sticky rice powder, and a garlic powder makes a delicious crunchy pancake.

Ingredients
Korean Pancake Mix
200g or 7oz all-purpose flour
2 tablespoons potato starch
2 tablespoons dried shrimp, ground
1 tablespoon sticky rice powder (chapssal garu in Korean or mocha flour in Japanese)
1 tablespoon garlic powder
1/2 teaspoon teaspoon salt
Zucchini & Carrot Jeon(Savory Pancake)
1/2 zucchini
1/3 carrot
5~6 tablespoon pancake mix
2~3 tablespoons water
2 tablespoons vegetable oil
1 teaspoon for the brine
Instructions
1. In a big bowl, add flour, potato starch, and a sticky rice powder. Add coarse salt, garlic powder, and ground black pepper.
2. Prepare ground dried shrimp. Add it to the flour mixture and sieve the pancake mixture.
Make a savory pancake using zucchini and carrots.
1. Julienne the zucchini and carrot, then season them with salt. Let them sit for about 20 minutes to allow excess moisture to be released.
2. Blend in 5 to 6 tablespoons of the flour mix until it has a thick consistency batter. Add a few tablespoons of water to make a thick consistency.
3. Heat the pan over medium heat. Add a few tablespoons of the flour mixture to the prepared vegetables.
4. Scoop a generous portion onto the pan. Spread the mixture evenly and allow it to cook until turns brown and develops a crispy texture. Turn it over and cook the other side as well.
