Step-by-Step with Measurements:
1. Chickpeas: Soak 2 cups chole/chickpeas in warm water for 5–6 hours.
2. Cook Chickpeas: Pressure cook with 3 cups water, ½ tbsp turmeric, and 1 tbsp salt for 3–4 whistles.
3. Boil Rice: Boil 5 cups water with 2 bay leaves, 3–4 cloves, and 1 tbsp salt. Once it boils, add 1½ cups washed rice and cook for 10–15 minutes on medium flame.
4. Jeera Rice: Heat 1½ tbsp ghee in a pan, add 1 tbsp jeera, ½ tbsp salt, and 1 tsp hing; stir and mix into boiled rice. Mix well—jeera rice is ready!
5. Chole Masala:
o Add ½ tbsp red chili powder, 1 tbsp dhaniya-jeera powder, ¼ tbsp garam masala, and ¼ tbsp dry mango powder to boiled chickpeas.
o Crush some chickpeas lightly while mixing.
6. Onion Salad: Julienne 1 onion, add ¼ tbsp salt and ¼ tbsp lemon juice, mix well, and set aside.
7. Chole Preparation:
o Heat 2 tbsp oil in a pan, add 1 tbsp jeera, 2 whole red chilies, 1 star anise, 2 cloves, 1 bay leaf, 2-inch cinnamon stick, and 1 tsp hing.
o Add 1 medium onion (chopped) and cook until transparent.
o Add 2 tbsp garlic-ginger-green chili paste, cook 2–3 minutes until oil separates.
o Add 2 chopped tomatoes, ¼ tbsp salt, cover, and cook until soft.
o Add 1 cup water, cook until oil separates.
o Add boiled chickpeas, 1 cup water, cover, and cook until gravy thickens.
8. Tadka for Chole:
o Heat 1½ tbsp ghee in a frying pan until steaming.
o Add 2 green chilies, slit in half.
o Add 1 tbsp red chili powder, 1 tbsp dhaniya-jeera powder, ½ tbsp whole jeera, and 1 tsp hing.
9. Finish: Add chopped coriander to chole, and mix the tadka into the chole.
10. Onion Salad: Drain excess water. Add ½ tbsp homemade green chutney to onions and mix.
11. Serve: Plate rice, chole, and onion salad. Garnish with coriander and lemon juice.
