Hello, everyone! Welcome back to our channel! In today's video, we're bringing you the authentic taste of Cornwall with a traditional Cornish pasty recipe. Special thanks to our collaborator, the talented @BackyardChef for showcasing this delicious recipe using the HYSapientia 24L Air Fryer Oven.
History & Cultural Significance
The Cornish pasty has a rich history dating back to the 13th century in Cornwall, England. Originally a delicacy for the wealthy, it evolved into a staple for Cornish miners by the 17th and 18th centuries. The thick crimped edge served a practical purpose, allowing miners to hold the pasty with dirty hands, discarding the edge afterward. This hearty meal could withstand the tough conditions of a miner's workday. In 2011, the Cornish pasty was granted Protected Geographical Indication (PGI) status, recognizing its cultural and historical importance.
Ingredients:
For the Pastry:
420 g All Purpose Flour
65 ml Water
150 g Shortening
50 g Butter or Margarine
1 Medium Egg
1 tsp Apple Cider Vinegar
1 tsp Salt
For the Filling:
350 g Beef Skirt or Chuck Steak, chopped into small pieces (topside is also an option)
250 g Potato, peeled and diced into small cubes
100 g Turnip or Swede (Rutabaga), peeled and diced into small cubes
1 Medium Onion, finely chopped
Salt and Pepper, to taste
1 Egg, beaten, for glazing
Instructions:
Preheat your HYSapientia Air Fryer Oven to 165°C (330°F).
Prepare the pastry by mixing flour, shortening, butter, salt, water, egg, and apple cider vinegar. Knead until smooth, then let it rest.
For the filling, combine the beef, potatoes, turnip, onion, salt, and pepper.
Roll out the pastry and cut into circles. Place the filling in the center and fold the pastry over, crimping the edges to seal.
Brush the pasties with beaten egg.
Place the pasties in the air fryer and bake at 165°C (330°F) for 35 minutes until golden brown.
