Hello, I’m Caroline, I live in the Isle of Skye, come spend the week with me!
Gochujang curry:
Fry red onion, garlic and chorizo for 5 mins
Add tin of chickpeas and fry for further 3 mins
Add 300ml ham stock and simmer for 10 mins
Add 100ml cream and 1tbs Gochujang pasta and simmer for further 10 mins
Add peas and simmer for another 5 mins

Lemon chicken orzo:
Marinade 6 chicken thighs in 2 tbs greek yoghurt, zest of one lemon, juice of one lemon, 1/2 tsp salt, 1 tsp oregano, 4 cloves crushed garlic for up to 24 hours (if you have no time to marinade don’t worry, just coat the chicken and begin)
Fry the chicken skin down until it crispens
Remove the chicken from pan
Add 25g butter to same pan chicken was in
Add orzo, broccoli and 750 ml chicken stock (2 stock cubes)
Add chicken back to pan with skin above water
Put in oven at 190 Celsius for 35-40 mins
Bring out of oven and rest with lid on for 10 mins
