Recipe:
4 chicken breasts, boneless
1 cup apple cider
1/2 cup flour
1 tsp. ground ginger
1 tsp. ground cinnamon
Salt & Pepper
2 Tbsp. brown sugar
1 red apple, cored and sliced thin
2 Tbsp. honey (optional)
1. Place chicken in a shallow dish, pour the cider over and let stand at least one hour.
2. Remove the chicken from the cider. Reserve the cider.
3. Mix the flour, ginger, cinnamon, salt & pepper in a small bowl. Dredge the chicken in the flour mixture and place in shallow baking dish.
4. Bake chicken at 350 degrees for 40 minutes.
5. While chicken is baking, prepare glaze. In small bowl, combine the reserved cider, brown sugar, honey and apple slices.
6. At the 40-minute mark, pour the cider/apple mixture over the chicken.
7. Continue baking the chicken for another 20 minutes.
