As you can tell, I really like a nice bright red wine. This is how I made one that tastes amazing. I could have used Pectolase an enzyme that breaks down the pectin haze that will often occur with fruit and berry wines, but I chose not too as I wanted to keep this wine in secondary fermentation for about six months or more. Whilst it's sat there aging, it should clear but if it doesn't I won't mind because it alrfeady looks great and the taste is really good.
