In this video, I pick a local fruit of Gilan called Konos from the tree to show a corner of the daily life and nature of this region. To prepare the food, I prepare the ingredients in a traditional Gilan clay pot (Namak Yar); the same old pot that generations have used in Gilan kitchens and cooking in it has a nostalgic and pleasant feeling. Ingredients for Stuffed Eggplant
4 medium eggplants
300 grams of crushed walnuts
2 tablespoons of sour pomegranate paste
100 grams of aromatic herbs (chives, coriander, parsley, basil) – divided equally
1 teaspoon of black pepper powder
Salt as needed
Tomatoes and oil as desired
