I bought a Big Joe upper grate and a standard Joe cast iron grate to create this Divide and Conquer on the awesome Weber Summit Kamado.
I also show you how to reverse sear dry brined ribeyes. I have since perfected that though and note the captions on the video, as it will be better with my updated methods. 24 hour dry brining is about right as too much moisture is sucked from the steak.
