LAUKI MUTHIYA
Introducing the nutritious and delicious Lauki Muthiya - a traditional Gujarati delicacy packed with health benefits! 🌿 Lauki, also known as bottle gourd, is not only low in calories but also rich in vitamins, minerals, and antioxidants. Recipe -
In a mixer jar, take 200 gm lauki, peel and cut into cubes
add 2-3 chopped green chillies
add a small piece of ginger
Grind everything
Remove the mixture into a mixing bowl
Now add a small piece of grated carrot
Some fresh coriander
Add some red chilli powder, 2 tsp coriander powder, 1/2 tsp Haldi Powder
if you want you may add garam masala also
add salt
I have not added sugar but you may add upto 2 tsp sugar
add 1 tbs oil (as moyan)
squeeze 1 fresh lime juice
For binding, take 1/2 cup sooji (semolina) and 1 cup regular roti atta (wheat flour)
Mix everything well with your hand
Only If required, add water to adjust the consistency - the dough should be semi thick and not runny
Grease the steamer with oil, take small portion of muthiya and give it cylinder shape and place it in the steamer
Cover the steamer and let it steam for 20-25 minutes
Once the muthiya is done, let it come to room temperature and cut them
For tadka (Tadka is optional) - heat oil in a pan, add mustard seeds, white sesame seeds, hing (asafoetida) and curry leaves
And then add muthiya; toss it well in the tadka
Garnish Muthiya with Coriander and enjoy
