Hello my Friends!
Today I am make a Classic Southern Dessert but with a Twist, a Sugar Free Style! It is so delicious, flavorful, and it is the Best...Hope you enjoy it!!
1 cup (2 sticks) unsalted butter, softened
1/2 cup reduced fat cream cheese, softened
1 cup sweetener of your choice
4 jumbo eggs, room temperature
1 tsp vanilla extract
1 tsp lemon extract
2 cups self rising flour, sifted
3/4 cup evaporated milk
Optional: Glaze or Frosting
Cook's Note: You can use all purpose flour and add 1 tsp baking powder and 1/2 tsp salt.
Preheat Oven to 350 degrees
In a large bowl using a hand mixer, add butter, cream cheese, and sweetener; cream until fluffy. Add eggs one at a time and blend in; add vanilla and lemon extract and mix in. Add flour alternately with evaporated milk (begin and end with flour) Mix until well combined. Pour Cake batter into a 9-10 inch greased bundt pan. Bake for 1-1/2 hours or toothpick in the center comes out clean. (Depends how hot your Oven is) Remove from Oven and cool completely on a wire rack. Place Cake on stand or platter and add frosting or glaze, if optional. Serve with Vanilla Ice Cream.
