00:18 - Day 1: Avocado Basil Udon

Ingredients (1 serving):
1 avocado
1 tbsp minced garlic
1/2 tbsp mushroom seasoning (or salt)
1 tbsp dijon mustard
Splash of oat milk (~1/2 cup)
1 handful of basil or an entire pot of basil plant 🙂 (yes basil is the secret ingredient)
1 serving udon

00:48 - Day 2: Smashed Taco Burger

Ingredients (2 servings):
8 mini tortillas
~340g plant based minced beef
Vegan cheese
Coriander

Sauce:
1 tbsp onion marmalade (optional)
1 tbsp dijon mustard
1 tbsp chili sauce
1.5 tbsp vegan mayo
2 tiny little pickles (diced)
1/2 avocado (diced)

01:24 - Day 3: Korean Army Stew

Ingredients (3-4 servings):

Sauce:
3 tbsp gochujang
3 tbsp soy sauce
1 tbsp mushroom seasoning
3 tbsp Korean plum syrup/sugar
3 tbsp garlic
2-3 cups of water

Napa cabbage
Shiitake mushroom
1 bowl rice cake
1 bowl dumpling
Bean sprouts
1 block firm tofu
Kimchi
1 serving Kuan fen
1 ramen
3 fried beancurd skin
Vegan cheese
Spring onion
Sesame oil
Sesame seed

01:54 - Day 4: Rosé Udon

Ingredients (1 serving):
2 tbsp oil
1 tbsp garlic
1.5 tbsp gochujang
1 tbsp apricot jam / plum syrup / sugar
1 tbsp mushroom seasoning
1/2 cup water
1/2 cup oat milk
Vegan dumplings
1 serving udon
Vegan cheese
Spring onion
Sesame seed

02:13 - Day 5: Hash Brown Toast

Ingredients (1 serving):
3 hash brown
1 avocado (diced)
A handful of cherry tomatoes (diced)
A handful of pickles (diced)
1/4 tbsp or a sprinkle of salt
Spring onion
Sesame seed
Onion marmalade (optional) CAN YOU TELL HOW OBSESSED I am with it after my New Zealand trip, if you don’t get it check out my YT
vegan curry mayo (optional)

02:26 - Day 6: Pickled Onion

Ingredients:
5-6 red onions
1 cup/ 236ml water
1 cup / 236ml white vinegar
2 tbsp brown sugar
1 tbsp salt
1 tbsp peppercorn (optional)

02:48 - Day 7: Smashed Hash Brown Salad

Ingredients (5 servings):
7 hash brown (~500g)

Salad dressing:
4 heaping tbsp yogurt
1 tbsp mustard
2 tbsp mayo
1 cup of vegetable and fruits (I used corn, cucumber, and orange)
Sping onion
1/2 avocado (diced)
1 tbsp salt
1 tbsp lemon juice
1 tbsp chili flakes
Pickled onions (check out day 6 recipe on my page!!)

03:14 - Day 8: Crispy Seaweed Flakes

Ingredients:
1 dried Chinese seaweed
2 tbsp sesame oil
1/2 tbsp salt
1/2 tbsp sugar
Infinite amount of sesame seeds

03:38 - Day 9: Dumpling Salad

Ingredients (1 serving):
7 dumplings
1 tbsp garlic
1 tbsp soy sauce
1 tbsp veg oyster sauce
1 tbsp plum syrup
1 avocado
Coriander & spring onion
2-3 tbsp kimchi and extra kimchi juicee
Fried shallots
Crispy seaweed flakes (from day 8 recipe)

04:01 - Day 10: Creamy Spicy Basil Udon

Ingredients (1 serving):
1 serving udon
1 tbsp garlic
3/4 cup (177ml) oatmilk
1/2 tbsp hot sauce
1 tbsp soy sauce
Small handful basil leaves
3 tbsp vegan cheese
Sesame seed

04:23 - Day 11: Enoki Seaweed ‘Scallop’

Ingredients (1-2 serving):
3 packs (~300g) enoki mushrooms
3 seaweed sheets
3 rice paper

Sauce:
1 tbsp gochujang
1 tbsp maple syrup
1.5 tbsp vegan mayo
1 tbsp water
Seaweed flakes (check out day 8 recipe)
Sesame seed

04:47 - Day 12: Creamy Spicy Miso Noodles

Ingredients (1 serving):
1 serving noodle
1.5 tbsp garlic
1 tbsp gochujang
1/2 cup oat milk
1 tbsp miso
Sesame seed

05:00 - Day 13: Mapo Tofu

Ingredients (1 serving):
1 tbsp minced garlic
4-5 chinese dried mushroom
1 tbsp spicy doubanjiang (chinese bean paste)
Coriander or spring onions
1 block silken tofu
1 tbsp corn starch + 1 ladle water
1 tbsp veg oyster sauce
1 tbsp sugar
Sesame seeds

05:29 - Day 14: Korean Spicy Tofu Stew

Ingredients (2 serving):
1/2 onion (diced)
1 tbsp minced garlic
3-4 tbsp kimchi
1.5 tbsp gochujang
2 cup / 472g water
1 serving kuan fen
2 tbsp mushroom seasoning
2 tbsp plum syrup
1 tbsp soy sauce
1 block silken tofu
1 serving ramen
Corriander
Ling ling juan
Sesame seeds
Seaweed flakes (check out day 8 recipe)

05:53 - Day 15: Scallion Noodles

Ingredients (1 serving):
1 serving flour vermicelli noodle
3-4 stalks spring onions
1 tbsp minced garlic
2 tbsp soy sauce
1 tbsp veg oyster sauce
1 tbsp plum syrup
1 tbsp dark soy sauce
Sesame seeds
Sesame oil
