In this vlog, we cooked homemade mushroom biryani using aromatic whole spices, coconut milk, and fresh greens. This is a simple, flavourful, home-style recipe that turned out absolutely delicious.

📝 Ingredients Used
Main Ingredients
• Basmati rice (2 glasses)
• Mushroom
• Onion
• Tomato
• Coconut milk (1 cup)
• Oil
• Ghee (1 spoon)
• Salt
Whole Spices
• Cinnamon sticks (3 small)
• Cloves (5)
• Green cardamom (2)
• Star anise (Chakra Moggu) (1)
• Mace (Japatre) (few pieces)
• Marathi Moggu (2)
Spice Powders & Paste
• Red chilli powder
• Coriander powder
• Ginger garlic paste
Greens & Extras
• Coriander leaves
• Palak leaves
• Methi leaves
• Green chilli
• Cashews (5–10)
• Turmeric (optional but recommended)

👩🍳 Procedure
1. Marinate the Mushrooms
In a bowl, mix mushrooms with:
• 1 spoon red chilli powder
• 1 spoon coriander powder
• 1 spoon salt
• 1 spoon ginger garlic paste
Marinate for 15 minutes.

2. Vagarane / Tempering
Heat oil in a cooker and add 1 spoon ghee.
Add 1 sliced onion and 1 sliced tomato.
Add whole spices:
• 3 small cinnamon sticks
• 5 cloves
• 2 green cardamom
• 1 star anise (chakra moggu)
• Few pieces of mace (japatre)
• 2 marathi moggu
Add coriander leaves and palak leaves.
Sauté until golden brown, then add methi leaves and cook well.

3. Prepare the Masala Paste
Grind the following into a fine paste:
• 1 onion
• 1 tomato
• Few coriander leaves
• 5–10 cashews
• 5 cloves
• 1 cinnamon stick

4. Spice the Tempering
Add the masala paste to the cooker.
Then add:
• ¾ spoon red chilli powder
• ¾ spoon coriander powder
• 1 spoon ginger garlic paste
• Salt (to taste)
• Turmeric (optional)
Cook until the masala becomes aromatic and well combined.

5. Add the Mushrooms
Add the marinated mushrooms to the masala.
Mix well and cook for a few minutes.

6. Prepare the Rice
Wash basmati rice and soak for 20 minutes.

7. Add Rice & Liquid
Add the soaked rice to the masala.
Let it boil for a few minutes, then add:
• 1 cup coconut milk
• 2 cups water
Mix gently.

8. Pressure Cook
Close the cooker lid with the whistle and cook for 2 whistles.
