I picked up this cut from Vessel Meats @vesselmeats6179 in Dartmouth, Nova Scotia, and seasoned it with Maritime Madness @maritimemadnesshotsauce Unreal Pepper Dry Rub. It’s bold, peppery, and lets the natural beef flavor shine through.
Here’s how I cooked it:
Start over indirect heat to slowly bring the internal temp up
Aim for 130–135°F for medium-rare
Sear over high heat at the end for that golden crust
Rest for 5–10 minutes before slicing
Slice against the grain to keep it tender
