Panj Daal
Ingredients:
• Mixed lentils – 1/2 kg
(Moong dal, red kidney beans, white kidney beans, whole masoor dal, chana dal)
• Red chilli powder – 2 tsp
• Turmeric powder – 1 tsp
• Salt – 1 tsp
• Tamarind juice – 1 cup
• Tomatoes – 2
For Tempering (Tarka):
• Oil – 1/2 cup
• Onion – 1
• Cumin seeds – 1 tsp
• Green chillies & fresh coriander – as needed
• Whole round red chillies – 10
• Garlic cloves – as needed
Method:
Wash all the lentils and put them on the stove to cook. Add tomatoes, onion, red chilli powder, salt, and turmeric, and cook until the lentils are completely soft. Once done, mash them well. Then add the tamarind juice and mix.
In a separate pan, heat oil and fry the whole red chillies, onion, cumin seeds, and garlic cloves until fragrant. Pour this tempering over the lentils. Finally, add green chillies and fresh coriander, turn off the heat, and serve.

Tomato Chicken Curry
Ingredients:
• Chicken (karahi pieces) – 1/2 kg
• Tomatoes – 1/2 kg
• Mustard seeds – 1 tsp
• Curry leaves – 6
• Red chilli powder – 2 tsp
• Turmeric powder – 1/2 tsp
• Salt – 1 tsp
• Fresh coriander – 1/2 bunch
• Coriander powder – 2 tsp
• Garlic – 1 whole bulb
• Oil – 1/2 cup
Method:
Fry the onions in hot oil and remove them. Blend the fried onions with tomatoes to make a paste.
Now, in the same oil, add curry leaves, mustard seeds, and all the spices. Then add the blended tomato–onion paste and sauté well. When the oil rises to the top, add the chicken and fry it thoroughly.
Pour in 2 cups of water and let the chicken cook on low heat. Once the chicken is tender, add green chillies and fresh coriander, then turn off the heat.
