Check out how to prepare and cook soft shell crabs. They may seem intimidating and complicated to cook but trust me, it's super easy. Just have a look by yourself and let me know what you think about it!
Ingredients for soft shell crab tempura with homemade curry sauce:
For the tempura:
Soft shell crab 4pcs
Eggs 2pcs
Flour 400g
Sparkling water 375ml
For the sauce:
Egg yolk2pcs
Mustard 1 tbsp
Curry paste 4 tbsp
Tabasco few drops
Ketchup 2 tbps
Oil 200ml
For the tempura:
1. Whisk 2 eggs in a bowl
2. Slowly add the sparkling water
3. Add the flour and mix well
4. Let it rest in the freezer
For the sauce:
5. Add in a bowl: 2 egg yolks, a spoon of mustard, and the oil while whisking, the ketchup, the curry paste and few drops of tabasco
6. Put aside in the fridge
For the crabs:
7. Cut their mouth and eyes with scissors
8. Remove the gills on each side and their apron
9. Keep the claws on the side and cut the crabs in half
10. Heat the oil at 175C
11. Dip the crab in the tempura mix and fry. Put aside when you have a nice golden color..
