One of the easiest way of making traditional and authentic North Indian Dhaba style Makki/Makke ki roti (Indian corn flour flat bread ) with sarson ka saag (mustard leaves)
Ingredients to make makki ki roti with sarson ka ssag :-
Ingredients:- 500g mustard leaves with stem, 500g spinach leaves, 1 tsp Jowar (sorghum), 1 tsp bajra (Pearl Millet), salt to taste, 15g ginger, 3-5 garlic cloves, 2 onion, 2 tomato, 2 green chilli, 350g maize flour, oil as required, water as required
How to make sarson ka saag:-
Take 500g mustard Leaves with stem on and spinach leaves clean and wash them thoroughly, roughly chop both and transfer in a pressure cooker
Add 1 glass water, some chopped ginger and salt to taste
Pressure cook it for 4 whistles
Once done, let it Cool slightly than blend the mixture with the help of a hand blender of using electronic mixer.
In a bowl mix 1 tbsp of maize flour with water and make a paste
Add the paste to Cooked and blended mixture...mix well and cook again on medium to low heat.
simultaneously prepare your tempering
For tempering heat 2 tsp oil in a pan or kadai...add chopped garlic, green chillies and chopped onion
Once onions are slightly brown add chopped tomatoes and cook until tomatoes are soft and mushy
Add 1 tsp all Purpose Masala ....mix the tempering with cooked saag mixture
You sarson ka saag is ready
How to cook makki ki roti:-
In a pan/Patila heat 1 cup water add salt to taste..
Once the water has started to boil add 300-350g maize flour, mix nicely and remove from heat
Let it Cool slightly...than transfer on a flat surface
(If the mixture is too soft and sticky add more plain flour , if it's hard and dry add some more water)
Prepare a dough with hard hands.
Once the dough is prepared take small portion from the dough and make a ball and flatten it with hands
Now take a plastic sheet, zip lock bag Place the flatten ball at the centre...fold and cover the ball with rest of the sheet ...grease it nicely and roll it with rolling pin (use soft hands) to make a roti
Place the roti on hot tava or pan and cook from both sides on medium to low heat
Slightly grease with oil while cooking to make the rotis soft
Remove from heat once they are nicely
Serve warm with sarson ka saag
