Welcome to my new kitchen in Osaka! I moved here just a few weeks ago and life is finally starting to settle in. As the weather warms up, I’m excited to share 3 days of my bento routine featuring fresh spring ingredients.
These recipes are designed for easy meal prep—perfect for busy mornings or as a healthy lunch at home. I hope these ideas bring a little bit of Japanese spring to your table!

[Ingredients]
Day 1
Chicken Teriyaki:
・Chicken thigh150g,
・Soy sauce 1tbsp,
・Mirin 1tbsp,
・Sake 1tbsp,
・Sugar 2tsp,
・Sansho pepper.
Namasu Pickles:
・Radish 200g,
・Carrot 50g,
・Vinegar 150cc
・Water 150cc,
・Sugar 75g,
・Salt 2g,
・chili pepper
・ Kombu.
Dashimaki Tamago:
・Eggs 2,
・Water 60cc,
・Mirin 2tsp
・Soy sauce 2tsp,
・Dashi powder 1/2tsp
・Potato starch 1tsp,
・Pea shoots.
Nanohana in Spicy Mustard Dressing
・Nanohana 50g
・Water 50cc
・Soy sauce 10g
・Mirin 5g
・Dashi powder 1/4tsp
・Japanese mustard
Day 2
Simmered Chicken:
・Chicken wings 5〜6Piece ,
・Radish 250g,
・Water 100cc,
・Soy sauce 60cc,
・Sake 50cc,
・Vinegar 60cc,
・Sugar.
Stir-fry:
・Glass noodles 10g,
・Pea shoots ,
・Tuna (canned),
・Garlic,
・Sesame oil.
・Oyster sauce
・Soy sauce
・Salt
Salad: Nanohana (Canola blossoms) 50g,
・Boiled eggs 1,
・Mayonnaise 50g,
・Yuzu Kosho.
Day 3
Chicken Nanban:
・Chicken thigh 300g,
・Egg, Flour,
・ Sweet vinegar (Soy sauce 30g Vinegar 30g, Sugar 20g, Ginger).
Tartar Sauce:
Boiled eggs , Onion , Capers, Mayonnaise, White wine vinegar.
Chikuwa:
・Chikuwa (Fish cake) 2piece,
・Soy sauce 2tsp,
・Sake 2tsp
・Garlic,
・Aonori (Seaweed),
・Potato starch.
[Brief Instructions]
Prep Ahead: Make the "Namasu" pickles a day in advance for a mellow, balanced flavor.
Chicken Care: Score the chicken wings along the bone for easier eating and faster cooking.
The Secret to Tamagoyaki: Adding a touch of potato starch ensures your dashi-filled eggs stay juicy and fluffy.
Nanban Technique: Dip the fried chicken into the sweet vinegar while it's still warm to let the flavors soak in deep.
