Steamed Sweet Khuwa Yomari

Ingredients
1000 g rice flour
1 cup khuwa (dried whole milk / milk solids)
1 tbsp ghee
½ cup milk
½ cup coconut powder
1 cup sugar
≈ 80 ml hot water (about 1/12 litre)
Extra warm water + a little oil for shaping
Step 1 – Prepare the Filling
In a saucepan, add 1 tablespoon ghee and 1 cup khuwa (milk solids).
Cook on low heat.
Add ½ cup milk, ½ cup coconut powder, and 1 cup sugar.
Mix everything well until smooth and slightly thick.
Remove from heat and set aside to cool.
Step 2 – Make the Dough
Add 1000 grams rice flour into a stand mixer bowl.
Start mixing on low speed and add about 80 ml hot water slowly.
(You can also knead the dough by hand.)
Step 3 – Check the Dough Texture
Add hot water gradually until the dough becomes soft and smooth but not runny.
Increase mixer speed slightly if needed.
Step 4 – Rest the Dough
Transfer the dough into a bowl and cover with a warm muslin cloth.
Let it rest while preparing for shaping.
Step 5 – Prepare Shaping Water
In a small bowl, mix warm water with a little oil.
This helps prevent sticking while shaping the Yomari.
Step 6 – Shape the Dough
Take a small portion of dough and roll it into a ball.
Dip your fingers into the oil-water mixture.
Step 7 – Make the Hollow Cone
Using your finger, gently press into the center of the dough ball and shape it into a hollow cone.
Step 8 – Fill the Yomari
Add 1 tablespoon of the sweet khuwa filling inside the cone.
Slowly close the top tip of the dough.
Be gentle so the filling does not come out.
Step 9 – Repeat
Repeat the same process until all Yomari are shaped.
Step 10 – Steam
Place the Yomari in a steamer.
Steam for 20–25 minutes on medium-high heat until they become slightly shiny.
Step 11 – Serve
Carefully remove from the steamer and serve hot.
Step 12 – Enjoy
Soft, sweet, and delicious Steamed Sweet Khuwa Yomari is ready!
