Turkey Noodle Soup

1 turkey carcass, broken into several pieces
2 qts. Water
1 tsp. Salt
1/4 tsp. Pepper
1 onion, chopped
2 stalks celery, chopped
1 carrot, chopped
1 tbs. Dried parsley leaves
1/2 tsp. Marjoram leaves
1 bay leaf
3 inch square cheesecloth
6 ozs. Noodles, cooled and drained
Combine turkey carcass and water in slow-cooking pot. Place parsley, marjoram and bay leaf in center of cheese-cloth. Gather up sides and tie. Drop in pot with turkey. Cover and cook on low for 5-6 hours. Remove carcass snd spice bag from pot. Take meat off bones; return meat to pot. Drop cooked noodles into pot with meat. Cover and cook on high for 20 to 30 minutes. Makes 8 servings.
This recipe is designed for a 4 1/2 quart slow-cooking pot. For 3 1/2 quart or smaller slow-cooking pots, use chunks of turkey meat cut off the bones, or chicken parts.
