This is one of my signature dish steamed catfish with fermented fish sauce and rice powder. The catfish is gently steamed so the meat stays tender and moist. Fermented fish sauce adds a strong, savory aroma and deep umami flavor to the dish. Rice powder is mixed in to slightly thicken the sauce and balance the bold taste.
