Beef stew and Mashed potatoes
Makes 6 servings
Ingredients:
4.5 lb chuck roast
1 tbsp coarse kosher salt
1.5 tsp coarse ground black pepper
1.5 cup finely diced carrots
1 cup finely diced celery
1 cup finely diced onion
1 1/2 cups largely diced or cubed carrots
2 tbsp unsalted butter
1 tsp coarse kosher salt
1/2 tsp coarse black pepper
1 tbsp garlic powder
1 tbsp smoked paprika
1.5 tsp chili powder
1.5 tsp oregano
2 tbsp Worcestershire sauce
4 tbsp tomato paste
2 tbsp all purpose flour
4 cups chicken stock
2 cups water
2 bay leaves
1 rosemary sprig
4-5 thyme sprigs
Mashed potatoes:
3 lb gold potatoes (about 8 medium sized potatoes)
1 cup heavy whipping cream or whole milk
6 tbsp unsalted butter
2-3 sprigs each of thyme and rosemary
1 tbsp coarse kosher salt

Chicken pot pie filling
Makes 4-5 servings
Ingredients:
3.5 to 4 lb chicken breast
1 tbsp coarse kosher salt (to season the chicken)
2 tsp coarse ground black pepper (to season the chicken)
1 tbsp avocado oil (for searing the chicken)
1 cup finely diced carrots
1.5 cups finely diced onions
1 cup finely diced celery
4 tbsp unsalted butter
1 tbsp Trader Joe’s green goddess seasoning (substitute with dried parsley and chives or omit completely if none are available)
1 tsp onion powder
1 tbsp garlic powder
1/2 tsp poultry seasoning
1 tsp coarse black pepper
1 tbsp minced garlic (about 4-5 cloves)
3 tbsp all purpose flour
4 cups chicken broth
1/2 cup whole milk
1/2 cup heavy whipping cream
1 bay leaf
1 rosemary sprig
4-5 thyme sprigs

2 sticks of unsalted butter
3 1/2 cups of all-purpose flour
3 teaspoons of sugar
2 1/2 teaspoons of baking powder
1/4 teaspoon of baking soda
2 teaspoons of salt
1 cup of buttermilk

Cilantro-lime grilled Chicken
Makes 4-5 servings
Ingredients:
4-5 lb boneless, skin-on chicken thighs
1 cilantro bunch (stems removed)
Juice of 2 limes
1.5 tbsp avocado oil
1.5 tsp coarse kosher salt
2 tsp oregano
1/2 tbsp chili powder
1.5 tsp smoked paprika
1 tbsp garlic powder
1.5 tsp coarse black pepper
2 tbsp Worcestershire sauce
1/2 tsp cumin
1/2 cup diced onion
1.5 tbsp honey
1 tbsp minced garlic (4-5 cloves)
1/4 cup water (and an additional 1/4 cup to clean the blender)
Directions: see video, marinate for at least 2-3 hours and cook over a cast iron or pan for a total of 22-27 minutes or until fully cooked through.

1/2 tbsp chili powder
2 tbsp tomato paste
28 oz original rotel tomatoes
1 tbsp minced garlic (about 4-5 cloves)
1/2 tbsp oregano
1 tbsp Worcestershire sauce
1 tbsp sugar
1 lb Colby jack
1 lb monterey jack
1 lb mozzarella
1 package of large burrito style flour tortillas

2.5 to 3 lb chicken breast (sliced into fajita strips)
1/2 tbsp coarse kosher salt (to season chicken)

1 tsp cumin (to season chicken)
1/2 tbsp chili powder (to season chicken)
1 tbsp garlic powder (to season chicken)

1 large yellow onion (sliced)
1 yellow bell pepper (sliced)
1 red bell pepper (sliced)
1/2 tbsp chili powder
