Turai ki Sabzi Recipe -
Ingredients -
2 tblsps oil
1/2 tsp cumin seeds (Jeera)
1 tsp ginger paste
1 tsp garlic paste
1/4 tsp turmeric powder (Haldi powder)
1 tsp red chilly powder
1 medium onion grated (or a smooth paste)
1 tsp coriander seeds powder (Dhaniya powder)
1/2 tsp cumin seeds powder (Jeera powder)
1/4 tsp asafoetida (hing)
2 tblsps fresh curd (Dahi) (or purée of 1 tomato instead of Dahi)
1/2 tsp Garam masala powder
1 tsp salt (or as per taste)
250 Grams ridge gourd (Turai)
1 medium potato chopped and fried
1 tblsp coriander leaves
Method -
1) Heat oil, add Jeera. As the Jeera turns brown, add ginger garlic paste and sauté lightly. Add Haldi powder, red chilly powder and mix. Sauté lightly. Add grated onion and saute along with 2 tblsps water. Add Dhaniya powder, Jeera powder and mix. Add hing and sauté till the masala cooks. Add curd and sauté for 2 minutes on low flame then add garam masala powder, salt and mix. Add Turai and mix.
2) Cover the pan with a lid and cook on low flame for 5-7 minutes. Add chopped and fried potato and mix. Cook for 2 minutes with the lid on low flame. Then add coriander leaves and serve hot with roti, parathas or Puri.
