Описание: Over the next few decades, the human population will increase around a third to a peak of around 9 billion people. Societies are forecast to become wealthier, especially in the Asian region, driving a significant increase in the demand for protein. Without a shift to animal-free foods, agricultural demand will increase by around 70%. This is before any allowance for the prospective need to manufacture some hydrocarbons (such as plastics) from agricultural feedstocks.

Over the last few years, there has been an explosion in demand for animal-free foods, as more and more people adopt flexitarian and vegan diets. Technology is advancing rapidly, with a host of start-ups producing meat, fish, diary, cheese and even eggs from plants and fungi, as well as via cellular fermentation. Meanwhile, cities such as New York now have plant-forward agendas, playing a critical role in encouraging adoption of new diets. In this special episode, we will explore questions such as:
What forces are driving the shift to animal-free diets?

How can cities play a role in supporting these shifts?
