Chicken Pepper Fry (A South Indian classic!)

Smokey, spicy, and fragrant. Chicken Pepper Fry has got to be one of my favourite South Indian dishes, and now I’m going to show you how easy it is to make at home.
INGREDIENTS
1.5 lb boneless skinless chicken thighs cut into small pieces
1 tsp turmeric
1 tbsp grated garlic
1 tbsp grated ginger
Salt to taste
3 tbsp canola oil
1 large red onion, finely chopped
4 thai green chilis, minced
2 tbsp fresh curry leaves
1 tbsp black pepper, coarsely ground in a mortar and pestle
Juice of 1 lemon
¼ cup fresh chopped coriander.
METHOD
To a large bowl add chicken, turmeric, ½ tbsp grated garlic, ½ tbsp grated ginger, and salt to taste. Mix until the chicken is well coated, and allow to marinate for 10 minutes.
Add canola oil to a large frying pan and heat on medium. Once hot add onions and saute until golden brown. Add remaining grated garlic, and ginger and saute for 30 seconds. Then add green chilis and curry leaves, and cook for 15-30 seconds or until fragrant.
Increase heat to high and add chicken. Season with salt, and mix to coat with ingredients in the pan.
Reduce heat to medium, cover, and cook for 15 minutes.
Crush black peppercorns in a mortar and pestle until coarsely ground.
Remove lid, and season with black pepper. Mix and allow the majority of excess moisture in the pan to evaporate. Then add lemon juice, and allow to cook for a minute.
Remove from heat and garnish with fresh chopped coriander. Enjoy!
