桂圓甜湯圓 Longan Sweet Rice Balls
糯米糰
Glutinous Rice Balls
材料
糯米粉 450克
水 150克
紅麴粉 適量
Ingredients
450 grams glutinous rice flour
150 grams of water
Suitable amount of red yeast rice powder
做法
1. 將糯米粉與水揉勻成團。
2. 燒一鍋水,取1/5的米糰壓扁下鍋煮至浮起,撈出後放入米糰中揉勻增加麵糰黏性。可適量加入乾糯米粉以防沾黏。
3. 取部分揉好的糯米糰,加入紅麴粉揉勻成紅色米糰即成紅米糰。
Preparation Method
1. Take the glutinous rice flour and add water. Knead it evenly into a lump.
2. Boil a pot of water, Take about 1/5'th of the rice dough and mash into flat disks, put them into the pot and boil until the mashed disks of rice float. Remove them and put back into the rice dough and knead it to increase its viscosity. Adding dry glutinous rice flour is acceptable to prevent sticking.
3. Divide the kneaded glutinous rice and add red yeast rice powder to one portion of the dough. Knead the red rice yeast evenly into the dough.
福圓甜湯
Fortune Longan Sweet Rice Ball Soup
材料
糯米糰 200克
桂圓肉 60克
二砂糖 適量
Ingredients
200 grams Glutinous Rice Balls
60 grams of Longan Meat
Suitable amount of Sugar for the second step
做法
1. 將紅白兩色糯米糰搓條後切小粒,搓成小湯圓。
2. 燒約400CC水,放入桂圓肉,小火煮開約2分鐘後加入適量的糖後裝碗備用。
3. 另燒一鍋水,水開後放入小湯圓,小火煮至湯圓浮起後撈出瀝乾,放入桂圓湯中即可。
Preparation Method
1. Roll the red and white rice dough into strips and cut into pieces. Knead the pieces into round balls.
2. Boil about 400CC of water and put the dried Longan Meat into the pot. Let simmer over low heat for 2 minutes. Afterwards add a suitable amount of sugar then put the soup into a bowl and set aside.
3. Boil water in another pot and put in the little rice balls. Simmer until the balls rise to the surface after which remove and drain them. Finally, add them to the Longan Soup.
