In this video, I will be showing you how to make Fresh Aubergine, Green Tomato & Anchovy Curry . All of the fresh vegetables used in the video, including the curry leaves is from my garden. In my most recent garden video, the link above, I show me picking the vegetables. The fresh ingredients in the curry made it amazing! Aubergine, Green Tomato & Anchovy Curry ingredients :
Some dried anchovies
Aubergine - 3
Green chillies - 4
Green tomatoes - 3
Some curry leaves
Coconut oil - 5 tablespoons
Some salt
Mustard seeds - ¼ teaspoon
Fennel seeds - ¼ teaspoon
Cumin seeds - ¼ teaspoon
Whole head of garlic
Some shallots
Fenugreek seeds - ¼ teaspoon
Turmeric powder - ¼ teaspoon
Curry powder - 2½ teaspoons
