🍰 Moist Mango Cake Recipe
📝 Ingredients
For the Cake:
1½ cups (180g) all-purpose flour
1 tsp baking powder
½ tsp baking soda
¼ tsp salt
½ cup (120ml) vegetable oil
¾ cup (150g) granulated sugar
1 cup (250ml) mango puree (fresh or canned)
¼ cup (60ml) milk (room temperature)
2 eggs
Optional Add-ins:
½ tsp cardamom powder (for an Indian twist)
½ cup chopped mango pieces
¼ cup chopped nuts (cashews or almonds)
For Mango Frosting (optional):
1 cup whipped cream or buttercream
½ cup mango puree
A few slices of fresh mango for topping
👨🍳 Instructions
1. Preheat & Prep
Preheat your oven to 350°F (175°C).
Grease and flour a 7 or 8-inch round cake pan, or line with parchment paper.
2. Dry Ingredients
In a bowl, sift together flour, baking powder, baking soda, and salt. Set aside.
3. Wet Ingredients
In another large bowl, whisk oil and sugar until well combined.
Add mango puree, milk, vanilla extract, and lemon juice. Mix well.
4. Combine & Fold
Gradually add dry ingredients to wet ingredients.
Fold gently until the batter is smooth.
(Optional: Fold in mango chunks or nuts at this stage.)
5. Bake
Pour the batter into the prepared pan.
Tap the pan gently to remove air bubbles.
Bake for 30–35 minutes or until a toothpick inserted in the center comes out clean.
6. Cool & Frost
Let the cake cool completely on a wire rack.
