Ingredients (serves 6)
For the base shortcrust pastry:
For the filling:
• 600 g onions (about 4–5 medium), thinly sliced (5 UK cups / 4 ½ US cups)
• 150 g (1 ½ UK cups / 1 ⅓ US cups) diced smoked bacon or pancetta
• 2 tbsp (30 g / 2 US tbsp / 1 ½ UK tbsp) unsalted butter
• 200 ml (¾ UK cup / ¾ US cup + 1 tbsp) sour cream or crème fraîche
• 100 ml (⅓ UK cup + 1 tbsp / ⅓ US cup + 1 tbsp) heavy cream
• 3 medium eggs
• 1 tsp (5 g) caraway seeds (optional, traditional)
• ½ tsp (3 g) salt (adjust depending on bacon saltiness)
• ½ tsp (2 g) ground black pepper
• Pinch of nutmeg
Bake at 190°C (170°C fan) / 375°F for 35–40 minutes, until golden and just set.
Best eaten warm with a glass of Federweißer (young wine) or a good German lager.
