Hi! I'm Thea, a culinary graduate and a pastry chef. I'll show you how I bake tart shells, make lemon curd and Italian meringue to make Lemon Meringue Tarts.
SWEET PASTRY (PÂTE SUCRÉE) RECIPE
Ingredients:
120 g butter, softened
80 g powdered sugar (2/3 cup)
1 tsp vanilla extract
25 g ground almonds (3 Tbsp)
1 pinch salt
1 egg
200 g flour (2/3 cup)
YIELD: 1 9-inch tart ring
Chill for at least 2 hours.
LEMON CURD RECIPE
Ingredients:
150 g butter (3/4 cup)
150 g sugar (3/4 cup)
150 ml lemon juice (3/4 cup)
10 g lemon zest (2 Tbsp)
8 egg yolks (138 g)
ITALIAN MERINGUE RECIPE
Ingredients:
8 egg whites (250 g)
500 g sugar (2 1/2 cups)
125 ml water (1/2 cup)
